Applesauce Cinnamon Oat Muffins


Makes 12 muffins
  • 1 1/2 C oats
  • 1 1/4 C wheat or white all-purpose flour
  • 1/2 C brown sugar
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  •   1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 C applesauce [unsweetened]
  • 1/2 C almond milk
  • 3 TBS cooking oil
  • 1/2 tsp vanilla
  • 1 egg white
Preheat oven to 400 degrees. 
Grease a muffin tin or line with liners and set aside.
In a small bowl, combine the dry ingredients.
In a large bowl, combine the wet ingredients.
Pour the small bowl of dry ingredients into the large bowl of wet ingredients and mix well.
Fill muffins tins or liners 3/4 full with batter.
Bake for 15-18 minutes [or until toothpick comes out clean].

Apple-Cinnamon Pancakes


Makes approximately 10 small pancakes
  • 5 eggs
  • 2 C applesauce
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 C oats
Combine all ingredients in blender and puree until smooth.
Heat a lightly greased skillet over medium heat.
Pour approximately 1/4 cup of mix on heated skillet and cook until golden on each side.
Top with maple syrup and/or desired fruit.

Cinnamon Muffins


Makes 12 muffins
Streusel Topping
  • 1/3 C brown sugar
  • 1/4 C chopped walnuts
  • 1/4 C rolled oats
  • 1/2 C all-purpose flour
  • 3 TBS butter, softened
Combine all ingredients in a small bowl, stirring with a fork until the mixture is crumbly. 
Set aside.

Filling
  • 3 TBS butter, melted
  • 1/2 C brown sugar
  • 1 1/2 TBS ground cinnamon
Combine all ingredients in a small bowl, mixing until smooth. 
Set aside.

Muffins
  • 8 TBS (1 stick) butter, melted
  • 3/4 C milk
  • 2 large eggs
  • 1 3/4 C all-purpose flour
  • 1/2 C rolled oats
  • 2 TBS cornstarch
  • 3/4 C granulated sugar
  • 1 TBS baking powder
  • 1/2 tsp salt
  • Pinch ground nutmeg
  • 1/2 tsp cinnamon
Preheat oven to 400 degrees.
Line a cupcake pan with cupcake liners.
In a medium bowl, combine the melted butter, milk, and eggs, then whisk until combined.
In a large bowl, combine the remaining dry ingredients. Mix well.
Combine the wet and dry ingredients. Stir until the batter is smooth and well-combined.
Place approximately 2 tablespoons of the batter into each muffin liner (fill them halfway up.)
Place about 1-2 teaspoons of the cinnamon filling on top of the muffin batter.
Place the remaining batter on top of the cinnamon filling.
Sprinkle the streusel topping over each muffin.
Bake until a toothpick inserted into the center comes out clean, about 20-25 minutes.

Cinnamon Wheat Waffles

Serves 6-8
  • 2 C whole-wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 2 large eggs
  • 2 C milk
  • 1/2 C applesauce
  • 3 TBS olive oil
Combine all ingredients in a large bowl and mix well. Pour batter on to a heated waffle pan and cook 2-3 minutes, until golden.

Serve with desired fruit toppings.

Skinny Monkey Cookies


Makes 24 cookies
  • 3 bananas
  • 2 C old-fashioned oats
  • 1/4 C creamy peanut butter
  • 1/4 C unsweetened cocoa powder
  • 1/3 C unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
Preheat oven to 350.  
Mash bananas in a large bowl, then stir in remaining ingredients.
Drop batter by spoon-fulls onto greased cookie sheet. Bake 10-12 minutes.

Crepe Batter

Makes about 14 crepes- serves 6-8
  • 3 eggs
  • 1/4 tsp salt
  • 2 C flour
  • 2 C milk
  • 1/4 C melted butter or cooking oil
Blend all ingredients in a blender for about 1 minute.
Heat a medium-sized skillet on medium-high heat. Pour 1/4 C of batter at a time and cook until golden.
Fill crepes with desired ingredients. Our favorite is Nutella, Cool Whip, strawberries and blueberries.

Yogurt-Banana Waffles






*Makes 6 medium sized waffles

2 1/2 C almond flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
4 eggs
1 1/2 TBS honey
1/2 C yogurt 
1/4 C milk
1 very ripe banana, mashed with a fork

Combine all dry ingredients into a bowl. Add the wet ingredients and whisk until a batter forms. Pour 1/2 cup of batter onto a greased waffle iron a cook for 2 minutes. (all waffle irons vary in temperature so you may need more or less time).

Oatmeal Pancakes




* Makes 10 small pancakes

6 egg whites
1 C rolled oats, dry
1 C cottage cheese
2 tsp sugar
1 tsp cinnamon
1 tsp vanilla
In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed.

Stuffed French Toast


*Makes 1 Piece of Stuffed French Toast

2 pieces of sliced bread (white or wheat)
2 strawberries, sliced
2 eggs
1/2 tsp cinnamon
Whipped Cream
Maple Syrup

Whisk together eggs and cinnamon in a small dish. Cover one piece of bread with strawberries, then place the other slice of bread on top. Carefully dip in the egg mixture. Cook in skillet on medium-high heat. Top with whipped cream and maple syrup.

Bagels (Wheat)


      *Makes 12 bagels

1 teaspoon active dry yeast
1 1/4 cups warm milk (110 to 115 degrees F)
1/4 cup butter or margarine, softened
2 tablespoons sugar
1 teaspoon salt
1 egg yolk
3 3/4 cups wheat flour

In a mixing bowl, dissolve yeast in warm milk. Add the butter, sugar, salt and egg yolk; mix well. Stir in enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down. Shape into 12 balls. Push thumb through centers to form a 1-in. hole. Place on a floured surface. Cover and let rest for 10 minutes; flatten.

In a large saucepan, bring water to a boil. Drop bagels, one at a time, into boiling water. When bagels float to the surface, remove with a slotted spoon and place 2 in. apart on greased baking sheets. Bake at 400 degrees for 20 minutes or until golden brown. Remove from pans to wire racks to cool.

Granola Bars (White Chocolate Craisin)

Monica and I made these yesterday on one of our weekly play dates.


2 C rolled oats
1/2 C wheat germ (or flaxseed)
1/2 C sliced almonds
1/2 C semi-sweet chocolate chips
1/2 C dried fruit
1 (14-ounce) can sweetened condensed milk

Preheat oven to 325 degrees. Grease a 9-inch square baking pan with vegetable cooking spray.

Thoroughly mix all ingredients in a medium bowl. Turn into prepared pan and, using cooking spray-coated hands, pat down until firmly packed. Bake until golden brown, about 30 minutes. Cool to room temperature, and then put pan in freezer. 

When bar is firm, use a sharp knife to cut into 1x4-inch bars. Store in an airtight container in the fridge.

Cream of Wheat Muffins


1 1/2 C flour
1 C dry cream of wheat
1/2 C sugar
3/4 C milk
1/4 C vegetable or canola oil
1 egg
1 tsp vanilla
1 TBS baking powder
1/2 tsp salt

Combine all ingredients and stir together. Pour batter into a greased or paper-lined muffin tin. Bake at 375 for 10-15 minutes.

Blueberry Banana Muffins


My dear friend Monica shared a treat with me today.

1 1/2 C wheat flour (or white)
3/4 C white sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 C ground flax seed (optional)
1- 1 1/2 C oats
1 tsp vanilla extract
2 egg whites
1 C banana, mashed (2 or 3 bananas)
1/4 C applesauce

1/2 C blueberries

Preheat oven to 350 degrees. In a large bowl, stir together flour, sugar, flax meal, baking powder, baking soda and cinnamon. Add vanilla, egg whites, bananas and applesauce; stir just until combined. Stir in oatmeal then blueberries. Pour batter into cupcake pan. Bake in preheated oven for 20 to 30 minutes.

German Pankcakes

I had never even had a German Pancake til a year ago.
Surely I was missing out! I choose this over waffles, pancakes or french toast any day. Especially with fresh fruit and whipped cream on top.


1/2 C flour
1/2 C milk
1/2 cube (1/4 C) butter
3 eggs

Melt butter in 8" x 8" X 2" casserole dish in the oven as it preheats to 425.
Beat all other ingredients together. 

Slosh melted butter around the sides of the casserole dish, and then pour batter of other ingredients into butter and bake in center of oven for 20 min.
Serve with powdered sugar sprinkled over the top and/or your choice of syrup.
