Makes approximately 10 small pancakes
- 5 eggs
- 2 C applesauce
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 C oats
Combine all ingredients in blender and puree until smooth.
Heat a lightly greased skillet over medium heat.
Pour approximately 1/4 cup of mix on heated skillet and cook until golden on each side.
Top with maple syrup and/or desired fruit.
