Pumpkin Cupcakes


Makes 24 cupcakes 
  • 1 3/4 C all-purpose flour
  • 1 1/2 C white sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 C pumpkin puree
  • 1/3 C water
  • 1/2 C vegetable oil
  • 2 eggs 
Preheat oven to 325. Prepare cupcake pans and set aside.
Mix all ingredients in a large bowl. 
Pour mixture into cupcake pans.
Bake for 8-12 minutes. 
Let the cupcakes cool for about an hour.

Frost with Cream Cheese Frosting.
