Cream Cheese Frosting

Makes enough to generously cover a 9x13 cake/24 cupcakes
  • 1-8 oz. package of cream cheese
  • 6 TBS unsalted butter
  • 1 1/2 tsp vanilla
  • 4 C confectioners sugar
Soften the cream cheese and butter in the microwave, then with an electric mixer, beat until smooth for about 3 minutes. 
Add the vanilla and beat well. Gradually add the sugar, 1 C at a time, beating until smooth and creamy. Cover and refrigerate for 1 to 2 hours.
