Serves 4-6
- 4 boneless, skinless, raw chicken breasts, diced
- 1 can coconut milk
- 1 C vegetable or chicken broth
- 1 tsp cumin
- 1 1/2 tsp coriander
- 3 tsp curry powder
- 3 TBS soy sauce
- 2 TBS sugar
- 1 1/2 tsp salt
To
Garnish

Combine
coconut milk, broth, cumin, coriander, curry powder, soy sauce, sugar, and salt
in crock pot. Whisk until smooth.
Add diced chicken, cover and cook on low for 4-5 hrs.

TO
THICKEN THE SAUCE: In a separate bowl, add 1 cup of the curry sauce with 1/4 C
flour. Whisk until all the flour clumps are gone. Add the paste to the crock
pot, then let it simmer for 10-15 minutes, until sauce thickens.
*Repeat
if you desire thicker sauce.
Serve
over cooked rice, with lime and cilantro
