Serves 6-8
- 10 boneless chicken thighs
- 2 915 oz) cans mandarin oranges, drained
- 2 TBS olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp crushed red pepper
- 2/3 C brown sugar
- 3 TBS corn starch
Saute chicken in olive oil. Add salt, pepper, garlic powder and onion powder.
Mash mandarin oranges in a small bowl. Add red pepper, brown pepper, and corn starch.
Once chicken is cooked all the way through, add the mandarin sauce, cover, and summer for 15-20 min.
Serve over white rice.
