3 pounds of boneless, skinless pork
1 tsp salt
1/2 tsp pepper
1 TBS vegetable oil
1 (14.5 oz) can coconut milk
1 tsp ginger
1 tsp cumin
1 tsp turmeric
1 TBS curry powder
1/4 C tomato paste
1/2 C diced onions
3 cloves of garlic, minced
2 C frozen mango chunks, thawed
1/4 C cilantro
Dice pork into 1-inch cubes and brown in oil, salt and pepper in a medium sized skillet (6-8) minutes. Transfer to slow cooker along with remaining ingredients except mango and cilantro. Cook on LOW 8 hours or HIGH for 6 hours. With 30 minutes remaining, add cilantro and mango chunks. Serve over rice.
