Mac 'n' Cheese

*Serves 6-8

2 TBS cornstarch
2 1/4 C milk
1 clove of garlic, minced
12 oz of pasta
12 oz (1 1/2 C) American cheese, chopped in cubes
1/4 C Parmesan cheese
1 C frozen peas, thawed
salt and pepper to taste

Boil water in a 5-quart sauce pot and add pasta. While pasta is cooking... In a smaller sauce pot, whisk cornstarch and 1/4 C milk until smooth; add garlic and slowly whisk in remaining milk. Bring to a boil on medium-high heat, whisking constantly for 2 minutes then reduce heat to medium-low. Add cheeses and stir until smooth. Add peas.
Once the pasta in cooked, drain the water then add the cheese mixture to the cooked pasta and stir well. Add salt and pepper, then serve!
