Beef Stroganoff


With recipes I like to look for things that have fresh ingredients, but are also quick. Most of us are that way I am sure. As much as I love cooking, its tiring and I don't always have all the time in the world! So I have experimented with a couple recipes and created a simplified Beef Stroganoff recipe, keeping the fresh and the easy in mind. I have to say it was pretty delicious!

*Serves 8-10

2 pounds of beef roast
1 (12 oz) box of noodles
3 gloves garlic, minced
1 C mushrooms, sliced
3 TBS butter
4 TBS all-purpose flour
1 C beef broth
3 tsp Worcestershire sauce
1/2 C sour cream
salt and pepper to taste

In crock pot, cook beef on high for 4-5 hours or on low for 7-8 hours. Shred meat and set aside while you prepare sauce.

In a large skillet over medium heat, melt 1 TBS butter then add garlic and mushrooms. Saute for about 5 minutes until mushrooms are browned then remove pan from heat.
In a medium saucepan, melt remaining 2 TBS butter and whisk in flour. Pour in beef broth and Worcestershire sauce, stirring constantly until it has been brought to a boil. Turn heat down to a simmer for 2 minutes. Remove sauce from heat and add sour cream, saute garlic and mushrooms, and shredded beef.
Serve over egg noodles or white rice. Also really yummy served with Baked Broccoli as a side!
