Spinach Chicken Stromboli

*Serves 6-8
Dough
1 ½ C warm water
1 TBS yeast
1/2 TBS salt
1 TBS sugar
2 TBS oil
3 C flour
 
Mix yeast into water in small bowl. Mix dry ingredients and oil in large bowl. Add yeast and water to large bowl. Let rise for 20 minutes.
Stromboli
1 TBS butter
1 1/2 tsp italian seasoning
3 TBS parmesan cheese
1 1/2 C shredded mozzarella cheese
2 C spinach leaves
2 C cooked chicken, shredded
2 roma tomatoes, diced
Marinara sauce
Preheat oven to 350.
On a floured surface, roll dough into a 12x15 inch rectangle. Brush 1/2 TBS of butter over the dough. Evenly sprinkle Italian seasoning and mozzarella cheese. Spread the spinach leaves, chicken and tomatoes.
Working from the long end of the rectangle, roll up the dough (like a cinnamon roll). Pinch the seam and each end shut.
Place seam-side down on a buttered baking sheet. Brush remaining butter on top and sprinkle with parmesan cheese.
Bake for 15-20 minutes or until the top is golden brown. Cool for 15 minutes then slice into 1 inch slices. Serve with marinara sauce for dipping.
