Applesauce Cinnamon Oat Muffins


Makes 12 muffins
  • 1 1/2 C oats
  • 1 1/4 C wheat or white all-purpose flour
  • 1/2 C brown sugar
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  •   1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 C applesauce [unsweetened]
  • 1/2 C almond milk
  • 3 TBS cooking oil
  • 1/2 tsp vanilla
  • 1 egg white
Preheat oven to 400 degrees. 
Grease a muffin tin or line with liners and set aside.
In a small bowl, combine the dry ingredients.
In a large bowl, combine the wet ingredients.
Pour the small bowl of dry ingredients into the large bowl of wet ingredients and mix well.
Fill muffins tins or liners 3/4 full with batter.
Bake for 15-18 minutes [or until toothpick comes out clean].
