Ranch Mashed Potatoes

One of the side dishes from the meal Jay prepared for me on Valentine's Day.
My new favorite mashed potatoes!
Serves 4-6
  • 2 lbs. red potatoes, diced into 1-inch cubes (peel off the skin if desired)
  • 1/2 C sour cream
  • 1 packet (1 oz.) Hidden Valley Ranch Dressing mix
Place diced potatoes in a large pot, then cover with water.
Bring to a boil on high heat, then lower heat to medium until potatoes fall apart when pierced with a fork, 15-20 minutes.
Drain potatoes in a colander and return to pot.
Mash until smooth.
Stir in Ranch packet and sour cream.
Serve immediately.
