Cauliflower Pizza Crust


Makes: 6 mini pizzas/1 medium pizza/serves 2
  • 1 head cauliflower, chopped
  • 1/4 C mozzarella cheese, shredded
  • 1 egg
  • 1 C flour
  • 1/2 tsp fresh oregano, finely chopped
  • 1/2 tsp fresh rosemary, finely chopped
  • 1 garlic clove, minced
  • 1/4 tsp salt
Chop, and then steam cauliflower.
Once cauliflower is tender, drain out as much moisture as possible. [Very important- keeps the crust crispy and not soggy.] Set aside to cool.

In a medium-sized mixing bowl, whisk [by hand or with an electric mixer] mozzarella cheese, and egg.
Add the steamed cauliflower to the mixture. Mix well.
Add flour. Mix well.
Add remaining ingredients. Mix well.

Heat oven to 425 degrees.
Spray a large baking sheet with cooking spray.
Scoop out 6 pieces of dough to make 6 mini pizzas. OR pour out all of the dough to form a medium-sized pizza.
Knead and shape dough into a circle[s], using a spoon. [The dough is very sticky].
Bake for 10-15 minutes, or until dough is golden brown.

Remove pizza crust from the oven.
Add desired sauce and other toppings.
Return pizza to the oven. 
Turn the heat up to 'broil' and leave in until the cheese has melted and the crust is crispy.
