Loaded Nachos [Pork]


Serves 4
  • 4-5 C tortilla chips
  •  2 C pork or chicken, cooked and shredded
  • 1 1/2 C Monterrey Jack cheese, shredded
  • 1 avocado, halved, seeded, peeled and diced
  • 1 Roma tomato, diced
  • 1/2 C canned black beans
  • 1/2 C refried beans
  • 1/3 C corn
  • 4 oz. can diced green chilis
Preheat oven to 375 degrees. 
Lightly coat an 8x8 baking dish with nonstick spray.
Spread tortilla chips into the prepared baking dish. 

Top with cheese, meat, avocado, tomato, beans, corn and green chilies.
Place into oven and bake until cheese has melted, about 10 minutes.
Serve immediately.
