Quinoa-Black Bean Casserole


Serves 6-8
  • 2 C quinoa, cooked
  • 3 C black beans (2 15-oz. cans, drained and rinsed)
  • 2 large sweet potatoes, diced into 1/2 - 1 inch cubes
  • 1 C shredded cheddar cheese
  • 1 TBS cumin
  • 2 eggs
  • 1 C salsa
Garnish
fresh cilantro
avocado, diced
sour cream
tortilla chips
 
Preheat oven to 350 degrees.
Cook sweet potatoes in boiling water until cooked, but not mushy.
Prepare 9 x 13 casserole dish with cooking spray.
In a large bowl, combine quinoa, black beans, sweet potato, 1/2 cup of cheese, and cumin.
In a small bowl, combine eggs and salsa. Add to the quinoa mixture.
Pour quinoa mixture in prepared 9 x 13 dish.
Sprinkle remaining cheese over the top.
Bake for 30 minutes.
Garnish with desired toppings.
