Orange Chicken

Serves 6-8

Chicken 
  • 4-6 boneless, skinless chicken breasts or thighs, chopped into small chunks 
  • 1/3 C flour 
  • 1 egg, whisked 
  • olive oil
Pour flour, egg and raw chicken in a large ziploc bag. Seal, then shake until chicken is well coated with flour. Pour a small amount of olive oil in a skillet on medium-high heat, then brown the flour-covered chicken. (The chicken does not need to be fully cooked since its going to be in the crock pot.) After browning the chicken pieces, place in crock pot.

Orange Sauce 
  • 1/2 TBS salt
  • 1 tsp balsamic vinegar
  • 3 TBS ketchup
  • 4 TBS brown sugar
  • 6-oz can frozen orange juice concentrate (I only used half the can- I don't like my orange chicken too orangey :)) 
In a medium-size bowl mix all ingredients well. Pour the sauce into the crock pot, covering the chicken, then stir until chicken is well coated in orange sauce.
Cook on low for 5-6 hours or on high for 2-3.
