Mandarin Chicken

Serves 6-8
  • 10 boneless chicken thighs
  • 2 915 oz) cans mandarin oranges, drained
  • 2 TBS olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp crushed red pepper
  • 2/3 C brown sugar
  • 3 TBS corn starch
Saute chicken in olive oil. Add salt, pepper, garlic powder and onion powder. Mash mandarin oranges in a small bowl. Add red pepper, brown pepper, and corn starch. Once chicken is cooked all the way through, add the mandarin sauce, cover, and summer for 15-20 min. 
Serve over white rice.
