Oatmeal-Butterscotch Cookies

Makes 24 cookies
  • 1/2 C (1 stick) butter, softened
  • 1/2 C white sugar
  • 1/2 C brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 C flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 2 C oatmeal
  • 1 C butterscotch chips
In a large mixing bowl, mix together butter and sugars. Add eggs and vanilla.

In another bowl, add and mix the rest of the ingredients except for oatmeal and butterscotch chips, then combine with the creamed mixture and mix well. 
Add oatmeal and butterscotch chips. 
Roll dough into balls and place on a buttered cookie sheet.
Bake at 350 for 8 minutes.
