Potato Casserole


*Serves 8-10

12 potatoes
1 can cream of chicken soup
¼ C of butter
2 C of sour cream
1 ½ C of cheese


Wash, skin and dice potatoes, then boil in a large pot for 20-30 minutes. Meanwhile, mix up the rest of the ingredients in a large bowl.  Once potaotes are soft, mash them with a fork (they are not supposed to be perfectly smooth like mashed potaotes) and add to the large bowl with other ingredients. Mix well, then pour into a 9x13 baking dish. Bake at 375 for 30 minutes. Sprinkle cheese on top.
